Local gastronomy

Of course, the must-try local dish is the famous cassoulet! Eating a Toulouse cassoulet is a must when exploring the city! You'll easily find it on the menu of many restaurants. The recipe varies from chef to chef, but it's always made up of tasty beans, duck confit and the famous Toulouse sausage.

And yes, the star of the South-West, the star of cassoulet, is the Toulouse sausage! This home-made sausage is also often served with mashed potatoes, for a deliciously simple recipe. Don't hesitate to visit the markets to buy directly from local producers.

And while other specialities may be less well known to the general public, they are no less tasty. Start with the sweet fenetra, a generous, fresh and light summer cake made with almonds, lemons and apricots. For 10 years, Christian Constant, a Michelin-starred chef from Montauban, was in charge of the brasserie. Today, chef Yann Ghazal continues to offer traditional cuisine with a modern twist. L'os à moelle

L'os à moelle offers a warm welcome and typical Toulouse specialities! Located in the Matabiau district, a quarter of an hour's walk from the historic centre, this friendly restaurant focuses on local specialities. On the menu: homemade foie gras, roast cabécou with duck ham, sweetbread casserole with yellow wine or cassoulet with confit. Generous dishes at very reasonable prices, and a great way to share a good time!
